A pastry and head chef, who has set just up his own handmade ice cream business near Ulverston, has won his first retail contract to supply Low Sizergh Barn near Kendal with ice cream.
Steven Darvill, who has 15 years experience as a chef, and his partner Sarah Gibbs set up ‘The Handmade Ice Cream Company’ at the start of the year. The business is based at Lakeside near Ulverston and their aim is to produce the finest quality, restaurant grade ice cream. Their ice creams and sorbets are produced in small handmade batches of 16 flavoured ice creams, 11 types of sorbets and six savoury ice creams.
A self confessed ‘ice cream geek come ice scientist’ Steven spent a year researching the science and structure of ice cream guided by the great molecular gastronomic Harold McGee and his book of science in the kitchen. Steven spent three months alone investigating a crucial vanilla base experimenting with up to 40 different recipes.
Explaining his passion Steven said: “There is a lot of science to ice cream. For instance science influences the texture of ice cream which plays a key part in our enjoyment of it. If you eat our ice cream at -12c you will find that it becomes slightly chewy in the mouth, and doesn’t melt away too quickly. It will coat your tongue giving you are a more intense flavour unlike those that dissolve immediately in your mouth.”

“This Easter we are selling caramel, gingerbread, dark chocolate, praline, vanilla, strawberry, Lyth Valley damson and banana from our ice cream cart and they are going down a treat.”
Steven sources his milk and cream locally and uses no syrups or flavourings in his products. All the flavour comes from using natural, quality ingredients including damsons from the Lythe Valley, the best chocolate and vanilla from Madagascar.
